How to Make this Creamy Cancer-Fighting Broccoli Soup Recipe

This is why we will present a recipe which can be useful for parents whose children dislike veggies, as it helps “hide” vegetables in the meal itself. This tasty soup combines two very potent superfoods – avocado and broccoli. Your children will enjoy the creamy flavor of this soup so much that they will probably ask for another serving.

Ingredients:

  • 2 to 3 Hass avocados
  • 1 head of broccoli (steamed and cut into smaller pieces)
  • 1 cup of shredded raw cheddar (you can add more if you want to)
  • 4 ½ cups chicken broth
  • Salt and pepper to taste

Instructions:

  1. Steam broccoli for 4 to 5 minutes, let cool, and then cut up.
  2. Add broccoli, chicken broth, and avocados to a blender and blend until smooth.
  3. Cook over medium heat until thoroughly warmed, and add cheese. Stir well.

Broccoli has twice the vitamin C of an orange and as much calcium as whole milk (in a more absorbable form). It is also a good source vitamin A, vitamin E, B vitamins, potassium, and selenium.

When buying broccoli, always choose those with tight green florets, firm and moist-looking stalks, and are heavy for their size. It is recommended to avoid those that have dried out stems or yellowing florets. If the broccoli you bought is very fresh, you can store it in the fridge for up to 10 days.

In order to preserve the area with the highest concentrations of antioxidant, you should peel the avocado with your hands (similarly to how you peel a banana).

Also, use homemade chicken broth instead of canned chicken stock. Homemade bone broth is always a better option because it is rich in amino acids that have powerful anti-inflammatory effects.
